Smoked Salmon Spread

Our house is never going to be the same now that homemade bagels have arrived. There have been requests for poppy seed, sesame, and chocolate chip! I'm not surprised, and maybe that is why I have held out in making them for so long. Now that bagels are becoming a staple, it's time to start thinking about bagel toppings. My favorite bagel shop topping is the smoked salmon spread. Turns out it is amazingly simple to make at home. The bagel shop spread isn't quite this pink though. I'm not sure if it was the method or the fact that there's just a whole lot of salmon in this spread. Whatever the reason, it sure tastes good. That's all that matters, right? What's your favorite way to top your bagel?
Smoked Salmon Spread
adapted from Martha Stewart

1/4 cup mayonnaise
4 ounces cream cheese
1 tablespoon capers, rinsed and drained
1 tablespoon red onion, diced small
1 to 2 teaspoons fresh lemon juice
1/2 teaspoon prepared horseradish
2 ounces plus 2 more ounces thinly sliced smoked salmon, coarsely chopped
1 tablespoon chopped fresh parsley

In a food processor, combine mayonnaise, cream cheese, capers, red onion, lemon juice, horseradish, and 2 ounces smoked salmon. Process until smooth, about 20 seconds. Transfer to a small bowl and stir in remaining 2 ounces smoked salmon. Top with fresh parsley and serve with bagels.

    1. That color is pretty wild, literally Wild Alaska Salmon! I did everything I could to tone it down when editing the photos, but then I hated that the background looked green. In the end I decided to let the vibrant pink show its natural hue.
